  • 2 large garlic cloves, chopped
  • 3 tablespoons lime juice
  • 0.25 cup olive oil
  • 1 tablespoon white vinegar
  • 1 tablespoon Dijon mustard
  • 0.5 medium avocado, peeled and pitted
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 2 stalks green onions, chopped
  • 0.25 cup water

Directions

Step 1

Begin by preparing your ingredients: seed and chop the jalapeño peppers, roughly chop the garlic, and slice the green onions.

Step 2

In a blender or food processor, add 2 cups of fresh cilantro leaves, 2 seeded and chopped jalapeño peppers, 2 chopped garlic cloves, and the 2 chopped green onions.

Step 3

Add 3 tablespoons of lime juice, 1 tablespoon of white vinegar, and 1 tablespoon of Dijon mustard to the blender.

Step 4

Peel and pit half of an avocado, and add it to the mixture in the blender. This will add creaminess without using dairy.

Pour in 0.25 cups of olive oil and 0.25 cups of water into the blender to help the mixture blend smoothly.
