Ingredients

  • 4 large Egg whites
  • 150 g Granulated sugar
  • 150 g Almond flour
  • 200 g Unsalted butter
  • 180 g Confectioners' sugar
  • 1 tsp Vanilla extract
  • 4 large Egg yolks
  • 200 ml Heavy cream
  • 150 g Daim bars

Directions

Step 1

Preheat your oven to 175°C (350°F) and line the bottom of a 23 cm (9 inch) springform pan with parchment paper.

Step 2

In a clean, dry mixing bowl, whisk the egg whites until soft peaks form. Gradually add the granulated sugar and continue whisking until stiff, glossy peaks appear.

Gently fold in the almond flour until well combined, being careful not to deflate the meringue.

Spread the meringue evenly in the prepared springform pan and bake in the preheated oven for 25-30 minutes until the top is firm and lightly golden.
