Ingredients

  • 500 grams daikon radish
  • 1 teaspoon salt
  • 1 medium carrot
  • 2 stalks green onion
  • 2 tablespoons rice vinegar
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 2 teaspoons sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon toasted sesame seeds
  • 2 cloves garlic

Directions

Step 1

Peel the daikon radish and cut it into thin matchstick-sized strips (julienne).

Step 2

Place the daikon in a large bowl, sprinkle it with salt, and toss well. Let it sit for 10 minutes to draw out moisture.

Step 3

While the daikon sits, peel and julienne the carrot to match the size of the daikon strips, then set it aside.

Step 4

Finely slice the green onions and mince the garlic cloves. Set aside.

Step 5

After 10 minutes, rinse the daikon radish under cold water to remove excess salt. Drain well and gently squeeze out any excess water.

Step 6

In a large mixing bowl, combine the daikon, carrot, and green onions.

Step 7

In a small bowl, whisk together rice vinegar, gochugaru, sugar, sesame oil, and minced garlic to make the dressing.

Step 8

Pour the dressing over the daikon mixture and toss everything together until well-coated.

Step 9

Sprinkle toasted sesame seeds over the salad and lightly mix again.

Step 10

Chill in the refrigerator for at least 10 minutes before serving for the best flavor, or enjoy immediately.
