Ingredients

  • 1 medium-sized (approximately 1 pound) Daikon radish
  • 1 tablespoon Salt
  • 1 cup Rice vinegar
  • 0.5 cup Water
  • 0.5 cup Sugar
  • 0.5 teaspoon Turmeric powder
  • 0.25 teaspoon Red pepper flakes (optional for spice)

Directions

Step 1

Peel the daikon radish and slice it into rounds or matchstick-sized strips, about 1/4 inch thick.

Step 2

Place the sliced daikon in a large bowl and sprinkle with the salt. Toss to coat evenly and let it sit for 10 minutes to draw out moisture.

Step 3

Rinse the daikon well under cold water to remove the excess salt and pat dry with a clean kitchen towel or paper towel.

Step 4

In a small saucepan, combine the rice vinegar, water, sugar, and turmeric. If using red pepper flakes, add them as well. Heat the mixture over medium heat, stirring, until the sugar is fully dissolved. This should take about 3-5 minutes. Remove from heat and let the brine cool slightly.

Step 5

Place the prepared daikon slices into a clean jar or container with a tight-fitting lid. Pour the warm brine over the daikon, ensuring all the pieces are submerged.

Step 6

Once cooled to room temperature, seal the jar and transfer it to the refrigerator. Let the pickles sit for at least 12 hours to develop flavor, though they will taste best after 24-48 hours.

Step 7

Serve chilled as a side dish, garnish, or snack. These pickles will keep in the refrigerator for up to 2 weeks.
