Ingredients

  • 1 cup Urad dal (split skinned black gram)
  • 1 cup Water
  • 1 teaspoon Salt
  • 1 teaspoon Cumin seeds
  • 0.25 teaspoon Asafoetida (hing)
  • 0.5 teaspoon Baking soda
  • 2 cups Oil for frying
  • 2 cups Yogurt
  • 0.5 cup Water
  • 1 teaspoon Sugar
  • 1 teaspoon Chaat masala
  • 1 teaspoon Roasted cumin powder
  • 0.5 teaspoon Red chili powder
  • 0.75 cup Tamarind chutney
  • 2 tablespoons Fresh coriander leaves
  • 0.25 cup Pomegranate seeds
  • 0.25 cup Sev

Directions

Step 1

Rinse 1 cup of urad dal under running water and then soak it in water for 4-6 hours or overnight.

Step 2

Drain the soaked dal and blend it with minimal water to form a smooth and thick batter.

Step 3

Add salt, cumin seeds, asafoetida, and baking soda to the batter and mix well.

Step 4

Heat oil in a deep frying pan.

Step 5

Wet your hands, take small portions of the batter, shape them into balls, and gently flatten them.

Carefully slide each vada into the hot oil and fry on medium heat until golden brown and crispy.
