Ingredients

  • 500 grams Full-fat yogurt (hung to remove whey)
  • 150 grams Sugar
  • 100 grams Milk powder
  • 1 teaspoon Cardamom powder
  • 2 tablespoons Ghee (clarified butter)
  • 2 tablespoons Chopped pistachios
  • 2 tablespoons Chopped almonds

Directions

Step 1

Start by hanging full-fat yogurt in a muslin cloth for 4-5 hours or overnight to drain out the whey completely, resulting in thick hung curd.

Step 2

In a heavy-bottomed pan, heat 2 tablespoons of ghee on medium-low heat.

Step 3

Add the hung curd to the pan and cook it, stirring continuously, to prevent it from sticking or burning. This process will take about 10 minutes, and the yogurt will start thickening.

Step 4

Add sugar and continue to cook while stirring. The sugar will melt, and the mixture will become slightly runny again.

Step 5

Mix in milk powder and cardamom powder, and keep stirring to ensure there are no lumps. Cook until the mixture starts leaving the sides of the pan (approximately 10 minutes).

Step 6

Turn off the heat and let the mixture cool slightly, but not completely. It should still be warm and pliable.

Step 7

Grease a flat plate or a square baking dish with a little ghee, and spread the mixture evenly using a spatula or the back of a spoon.

Sprinkle the chopped pistachios and almonds evenly on top, and gently press them into the mixture using the back of a spoon or your fingers.

Let the barfi set for 1-2 hours at room temperature or in the refrigerator until firm.

Once set, cut into square or diamond-shaped pieces. Carefully lift the pieces out using a flat spatula or knife.

Serve the Dahi Barfi at room temperature or chilled. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
