Ingredients

  • 1 cup Urad dal (split black gram)
  • 0.25 cup Moong dal (split green gram)
  • 2 cups Yogurt
  • 2 cups Water
  • 1.5 teaspoons Salt
  • 1 teaspoon Sugar
  • 1 teaspoon Roasted cumin powder
  • 0.5 teaspoon Red chili powder
  • 2 Green chilies, chopped
  • 1 inch Ginger, grated
  • 2 cups Oil, for frying
  • 0.5 cup Tamarind chutney
  • 0.25 cup Coriander leaves, chopped
  • 1 teaspoon Chaat masala

Directions

Step 1

Rinse and soak the urad dal and moong dal together in enough water for at least 4 hours or overnight.

Step 2

Drain the dal and blend in a food processor or blender to a smooth paste with minimal water.

Step 3

Transfer the dal paste to a bowl, add 1 teaspoon salt, chopped green chilies, and grated ginger. Mix well.

Step 4

Heat oil in a deep pan for frying over medium heat.

Step 5

Drop spoonfuls of the batter into the hot oil and fry until golden brown. Remove the badas onto paper towels to drain excess oil.

In a large bowl, whisk yogurt with 1/2 teaspoon salt, sugar, and a little water to make a smooth consistency.
