Ingredients

  • 6 links Italian sausage (mild or hot)
  • 2 tablespoons Olive oil
  • 3 medium Bell peppers (red, yellow, or green)
  • 2 medium Yellow onion
  • 3 cloves Garlic
  • 0.5 teaspoons Crushed red pepper flakes (optional)
  • 28 ounces Canned crushed tomatoes
  • 1 teaspoons Dried oregano
  • 1 teaspoons Dried basil
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Heat a large skillet or sauté pan over medium heat. Add the Italian sausage links and cook for 8–10 minutes, turning occasionally, until browned on all sides. Remove the sausages from the pan and set aside. (They do not need to be fully cooked at this stage as they will finish cooking later.)

Step 2

While the sausages are browning, prepare the vegetables. Slice the bell peppers and onions into thin strips. Mince the garlic cloves.

Step 3

In the same skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced peppers and onions and sauté for 8 minutes, stirring occasionally, until softened and slightly caramelized.

Step 4

Add the minced garlic and crushed red pepper flakes (if using) to the skillet. Cook for 1 minute, stirring frequently, until fragrant.

Step 5

Pour the canned crushed tomatoes into the skillet. Stir in the dried oregano, dried basil, salt, and black pepper. Bring the mixture to a simmer.

Step 6

Slice the browned sausage links into 1-inch pieces and return them to the skillet. Stir to combine, then reduce the heat to low. Cover and simmer for 20–25 minutes, stirring occasionally, until the sausages are fully cooked through and the sauce has thickened slightly.

Step 7

Taste the dish and adjust seasoning if needed. Garnish with freshly chopped parsley, if desired, and serve hot with crusty bread, over pasta, or with rice.
