Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Unsweetened cocoa powder
  • 1 cups Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 2 large Eggs
  • 0.75 cups Milk
  • 0.5 cups Vegetable oil
  • 2 teaspoons Vanilla extract
  • 0.5 cups Boiling water
  • 1 cups (softened) Unsalted butter
  • 4 cups Powdered sugar
  • 0.5 cups Cocoa powder (for frosting)
  • 3 tablespoons Milk (for frosting)
  • 48 sticks Mini pretzel sticks
  • 24 pieces Candy eyes
  • 0.25 cups Chocolate sprinkles

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, granulated sugar, baking powder, baking soda, and salt.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until combined.

Step 4

Slowly stir in the boiling water. The batter will be thin, but this is normal. Mix until smooth.

Step 5

Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.

Step 6

Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Step 7

Let the cupcakes cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Step 8

To prepare the frosting, beat the softened butter in a mixing bowl until creamy. Gradually add the powdered sugar and cocoa powder while continuing to mix.

Step 9

Add the milk and beat the frosting until light and fluffy. Adjust consistency with a little more milk or powdered sugar if needed.

Step 10

Frost the cooled cupcakes using a spatula or piping bag.

Step 11

Sprinkle chocolate sprinkles over each frosted cupcake for texture.

Step 12

Break the mini pretzel sticks in half to create spider legs. Insert 4 pretzel halves on each side of the cupcakes to resemble legs, for a total of 8 legs per cupcake.

Step 13

Place two candy eyes on each cupcake to complete the Daddy Longlegs look.

Step 14

Serve immediately or store in an airtight container at room temperature for up to 2 days.
