Ingredients

  • 3 pieces Chicken breasts
  • 2 cups Shredded rotisserie chicken
  • 1 cup Chicken skin (from thighs or breasts)
  • 3 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 3 pieces Garlic cloves, minced
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 0.25 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken breasts with salt, pepper, and paprika on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside to rest.

Step 3

In the same skillet, add the butter and additional 1 tablespoon of olive oil. Add the chicken skin pieces and cook over medium heat until they become crispy, stirring occasionally. This should take about 5-7 minutes. Remove the crispy chicken skin and place on a paper towel to drain excess oil.
