Ingredients

  • 2 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Granulated sugar
  • 1 14-ounce can Crushed pineapple (with juice, unsweetened)
  • 1 large Egg
  • 0.25 cup Unsalted butter, melted and cooled
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups to prevent sticking.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and granulated sugar until well combined.

Step 3

In a separate medium bowl, lightly beat the egg, then stir in the crushed pineapple along with its juice, melted unsalted butter, and vanilla extract until fully incorporated.

Step 4

Create a well in the center of the dry ingredients and pour the wet mixture into it. Gently fold the wet and dry ingredients together using a spatula or wooden spoon. Be careful not to overmix; the batter should be just combined. If using chopped walnuts, fold them in at this point.

Step 5

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 6

Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are lightly golden.

Step 7

Remove the muffin tin from the oven and allow the muffins to cool in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely.

Step 8

Serve warm or at room temperature. These muffins can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
