  • 15 ounces canned black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0 sour cream (optional, for topping)
  • 0 shredded cheddar cheese (optional, for topping)
  • 0 chopped green onions (optional, for topping)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 4

Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until the beef is browned and no longer pink, about 6-8 minutes. Drain any excess fat, if necessary.

Step 5

Stir in the diced red and green bell peppers and cook for 3-4 minutes until slightly softened.

Step 6

Add the canned diced tomatoes, tomato paste, and beef broth. Stir to combine.

Step 7

Mix in the kidney beans, black beans, chili powder, ground cumin, smoked paprika, cayenne pepper, oregano, salt, and black pepper.

Step 8

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 45-60 minutes, stirring occasionally to prevent sticking.

Step 9

Taste and adjust seasonings as needed.

Step 10

Serve hot, topped with optional sour cream, shredded cheddar cheese, and chopped green onions, if desired.
