Ingredients

  • 2 pounds Boneless, skinless chicken thighs
  • 3 medium, sliced Carrots
  • 3 medium, sliced Celery stalks
  • 1 large, diced Yellow onion
  • 3 minced Garlic cloves
  • 8 cups Chicken broth
  • 2 Bay leaves
  • 1 teaspoon Dried thyme
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 4 tablespoons, cold and cubed Salted butter
  • 0.75 cup Whole milk
  • 0.5 cup Heavy cream
  • 2 tablespoons, chopped (optional) Fresh parsley
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a large Dutch oven or heavy-bottomed pot, heat 2 tablespoons of oil over medium heat. Add the chicken thighs and sear on each side until browned, about 3-4 minutes per side. Remove and set aside.

Step 2

In the same pot, add the carrots, celery, and onion. Sauté for 5-7 minutes until softened. Add the garlic and cook for 1 additional minute.

Step 3

Pour in the chicken broth and scrape up any browned bits from the bottom of the pot. Add the bay leaves, thyme, salt, and pepper.

Step 4

Return the chicken thighs to the pot. Bring to a boil, reduce the heat to low, cover, and simmer for 20 minutes, or until the chicken is fully cooked.

Step 5

While the chicken is cooking, prepare the dumpling dough. In a medium mixing bowl, combine the flour, baking powder, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the milk until just combined. Do not overmix.

Step 6

Remove the chicken from the pot and shred it with two forks. Discard the bay leaves.

Step 7

Return the shredded chicken to the pot and stir in the heavy cream. Bring the soup back to a low simmer.

Step 8

Using a tablespoon, drop spoonfuls of the dumpling dough onto the surface of the simmering soup. Cover the pot and let the dumplings cook for 12-15 minutes, or until they are puffed up and cooked through.

Step 9

Sprinkle the finished dish with chopped parsley (if using) and serve hot.
