Cut the free-range chicken breasts into medium-sized pieces and set aside.
In a blender, combine the shallots, garlic, ginger, turmeric powder, coriander powder, and cayenne pepper. Blend until a smooth paste forms.
Heat the vegetable oil in a large pan over medium heat. Add the spice paste and sauté until fragrant, about 5 minutes.
Bruise the lemongrass stalk by gently smashing it with the back of a knife and add it to the pan along with the kaffir lime leaves. Stir well.
Add the chicken pieces to the pan and toss to coat them with the spice mixture. Cook for about 5 minutes until the chicken starts to brown.
Meanwhile, squeeze the grated coconut with water to extract coconut milk. Repeat this process to make approximately 500 ml of coconut milk.
