Ingredients

  • 1 cup Yellow moong dal (split yellow lentils)
  • 3 cups Water
  • 2 tablespoons Ghee or oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 0.25 teaspoons Hing (asafoetida)
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Ginger, grated
  • 1 medium Green chili, finely chopped
  • 1 medium Tomato, finely chopped
  • 0.5 teaspoons Turmeric powder
  • 0.5 teaspoons Red chili powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoons Garam masala powder
  • 1 teaspoon Salt
  • 2 tablespoons Chopped cilantro (coriander leaves)
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the yellow moong dal thoroughly under cold water until the water runs clear. Set aside.

Step 2

In a medium-sized pot, combine the rinsed moong dal and 3 cups of water. Bring to a boil, then lower the heat to medium. Simmer for 15-20 minutes until the dal turns soft and breakable. Stir occasionally and skim off foam if necessary. Once cooked, mash the dal lightly and set aside.

Step 3

In a large pan, heat the ghee or oil over medium heat. Add cumin seeds and mustard seeds. Let them sizzle and pop for 30 seconds.

Step 4

Add the hing (asafoetida) and stir quickly. Immediately follow with the chopped onion. Sauté the onion until golden brown, about 5 minutes.

Stir in the minced garlic, grated ginger, and chopped green chili. Cook for another minute until fragrant.

Add the chopped tomato, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes break down and the mixture forms a thick paste, about 5-7 minutes.

Pour the cooked dal into the pan with the spice mixture. Add garam masala powder and salt. Mix well and simmer for 5 minutes, adjusting the consistency with water if needed.

Taste and adjust seasoning as desired. Turn off the heat and stir in freshly chopped cilantro and lemon juice.
