  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 large Garlic cloves, minced
  • 1 medium Green bell pepper, diced
  • 1 medium Red bell pepper, diced
  • 28 ounces Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Beef or chicken broth
  • 15 ounces Kidney beans, drained and rinsed
  • 15 ounces Black beans, drained and rinsed
  • 2 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 0.25 cup Chopped fresh cilantro (optional, for garnish)
  • 0.5 cup Sour cream (optional, for serving)
  • 1 cup Shredded cheddar cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground venison and cook until browned, breaking it up with a wooden spoon as it cooks, about 5-7 minutes. Remove the cooked meat and set aside.

Step 3

In the same pot, add the diced onion and garlic. Cook for 3-4 minutes until softened and fragrant.

Step 4

Add the green and red bell peppers, and cook for another 5 minutes until they begin to soften.

Step 5

Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, sugar, salt, and black pepper. Cook for 1-2 minutes to toast the spices.

Step 6

Return the browned venison to the pot and stir to combine.

Step 7

Add the crushed tomatoes, tomato paste, and broth. Stir well and bring to a gentle simmer.

Step 8

Add the kidney beans and black beans. Stir to incorporate evenly.

Step 9

Reduce the heat to low, cover, and let the chili simmer for 60-75 minutes, stirring occasionally to prevent sticking.

Step 10

Taste and adjust the seasoning with additional salt, pepper, or spices as needed.

Step 11

Serve hot, garnished with optional fresh cilantro, sour cream, and shredded cheddar cheese.
