Ingredients

  • 2 pounds ground beef
  • 2 tablespoons olive oil
  • 1 large, diced yellow onion
  • 1 medium, diced green bell pepper
  • 4 cloves, minced garlic
  • 28 ounces, canned crushed tomatoes
  • 14.5 ounces, canned diced tomatoes with green chilies
  • 15 ounces, canned, drained and rinsed kidney beans
  • 15 ounces, canned, drained and rinsed black beans
  • 1 cup beef broth
  • 3 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoons cayenne pepper
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon brown sugar

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat and add the olive oil.

Step 2

Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary and set the beef aside.

Step 3

In the same pot, add the diced onion and green bell pepper. Cook for 5 minutes, stirring occasionally, until softened.

Step 4

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 5

Return the browned beef to the pot. Add the crushed tomatoes, diced tomatoes with green chilies, beef broth, and tomato paste. Stir to combine.

Step 6

Add the kidney beans and black beans to the pot and stir to incorporate.

Step 7

Season with chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, black pepper, and brown sugar. Stir the spices evenly into the mixture.

Step 8

Bring the chili to a gentle boil, then reduce the heat to low. Cover and let it simmer for 60-75 minutes, stirring occasionally to prevent sticking.

Step 9

Taste and adjust seasonings as needed. If the chili is too thick, add a splash of beef broth or water to reach your desired consistency.

Step 10

Serve hot in bowls and garnish with your favorite toppings like shredded cheese, sour cream, chopped green onions, or tortilla chips.
