Ingredients

  • 1 large Russet potato
  • 1.5 cups Water
  • 6 tablespoons Unsalted butter
  • 0.25 cups Granulated sugar
  • 2 teaspoons Salt
  • 2.25 teaspoons Active dry yeast
  • 0.25 cups Warm water (110°F/45°C)
  • 2 large Eggs
  • 4.5 cups All-purpose flour
  • 2 tablespoons Vegetable oil or melted butter

Directions

Step 1

Peel and dice the potato. Boil it in a medium saucepan with 1.5 cups of water until it is tender, about 10-15 minutes.

Step 2

Drain the potato, reserving the cooking water. Mash the potato until smooth and set it aside to cool slightly.

Step 3

In the warm cooking water (about 110°F/45°C), melt the butter, sugar, and salt. Allow the mixture to cool to lukewarm (not hot to touch).

Step 4

In a small bowl, dissolve the active dry yeast in 0.25 cups of warm water (110°F/45°C). Let it sit for 5-10 minutes until foamy.

Step 5

In a large mixing bowl, combine the mashed potato, butter mixture, dissolved yeast, and eggs. Stir well to incorporate.

Step 6

Gradually add the flour, one cup at a time, mixing after each addition until a soft dough forms.

Step 7

Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes until smooth and elastic, adding flour as needed to prevent sticking.

Step 8

Place the dough in a lightly greased bowl. Cover it with a clean kitchen towel or plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Step 9

Punch down the dough and divide it into 12 equal portions. Shape each piece into a ball and place them on a greased or parchment-lined baking sheet, about 1-2 inches apart.

Step 10

Cover the rolls loosely with a kitchen towel and let them rise for another 30-40 minutes, until puffy.

Step 11

Preheat the oven to 375°F (190°C). Brush the tops of the rolls with vegetable oil or melted butter for a golden finish.

Step 12

Bake the rolls for 18-20 minutes, or until golden brown. Remove them from the oven and cool slightly before serving. Enjoy!
