Ingredients

  • 1 pound kielbasa sausage
  • 1 large yellow onion
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 3 medium russet potatoes
  • 3 tablespoons olive oil
  • 2 large garlic cloves
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.25 cup water or chicken broth
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Slice the kielbasa into 1/2-inch thick rounds and set aside.

Step 2

Peel and dice the russet potatoes into small, even cubes (about 1/2 inch per side) for quick and even cooking. Set aside.

Step 3

Thinly slice the yellow onion and julienne the red and green bell peppers. Mince the garlic cloves and set aside.

Step 4

Heat 2 tablespoons of olive oil in a large skillet or sauté pan over medium heat.

Step 5

Add the diced potatoes to the skillet and cook for about 10 minutes, stirring occasionally, until they begin to brown and crisp up. Remove the potatoes from the skillet and set aside.

Step 6

Add the remaining 1 tablespoon of olive oil to the same skillet, then add the sliced kielbasa. Cook for 4–5 minutes, stirring occasionally, until the kielbasa is browned and slightly crispy. Remove from the skillet and set aside.

Step 7

Add the sliced onions and bell peppers to the skillet. Sauté for about 5–7 minutes, stirring occasionally, until the vegetables are softened and slightly caramelized.

Step 8

Stir in the minced garlic, smoked paprika, dried thyme, black pepper, and salt. Cook for 1 minute, stirring constantly, to toast the spices and release their aroma.

Step 9

Return the browned potatoes and kielbasa to the skillet. Stir everything together until well combined.

Step 10

Pour in the water or chicken broth to deglaze the skillet, scraping up any browned bits from the bottom. Cover the skillet with a lid and let everything simmer over low heat for 5–7 minutes, allowing the flavors to meld and the potatoes to finish cooking.

Step 11

Remove the lid, give the mixture a final stir, and taste for seasoning. Add more salt or pepper if needed.

Step 12

Serve hot, optionally garnished with fresh parsley for a burst of color and flavor.
