Ingredients

  • 1 large onion
  • 3 cloves garlic cloves
  • 2 medium carrots
  • 4 cups vegetable or chicken stock
  • 0.5 cups heavy cream
  • 2 tablespoons olive oil
  • 0.5 teaspoons ground nutmeg
  • 0.25 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley (optional, for garnish)
  • 1 loaf crusty bread (optional, for serving)

Directions

Step 1

Peel and cube the pumpkin into 2-inch pieces. Peel and roughly chop the onion, garlic, and carrots.

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 3 to 5 minutes until soft and fragrant.
