Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 3 cups sharp cheddar cheese, shredded
  • 1.5 cups mozzarella cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 1 tsp Dijon mustard
  • 0.5 tsp paprika
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter (for topping)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni until al dente according to the package instructions. Drain and set aside.

Step 2

Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

Step 3

In a large saucepan, melt 4 tablespoons of butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly to form a smooth paste.

Gradually whisk in the milk and heavy cream. Continue to whisk until the mixture thickens and starts to bubble, about 4-5 minutes.

Reduce the heat to low. Stir in the sharp cheddar cheese, mozzarella cheese, and Parmesan cheese, one handful at a time, allowing each addition to melt completely before adding the next.
