Ingredients

  • 1000 grams Full-fat plain yogurt (curd)
  • 150 grams Powdered sugar
  • 1 pinch Saffron strands
  • 2 tablespoons Warm milk
  • 4 pods Green cardamom pods, seeds finely powdered
  • 2 tablespoons Slivered almonds
  • 2 tablespoons Chopped pistachios
  • 1 teaspoon Rose water (optional)

Directions

Step 1

1. Line a colander or large sieve with a clean muslin cloth or cheesecloth and place it over a large bowl. Pour the yogurt into the cloth to strain out the whey. Gather the edges of the cloth and tie it into a tight bundle.

Step 2

2. Place the yogurt bundle (still in the colander) in the refrigerator and allow it to drain for at least 4-6 hours or overnight. You’ll be left with thick, creamy hung curd.

Step 3

3. Transfer the hung curd into a mixing bowl. Whisk it until smooth and creamy, eliminating any lumps.

Step 4

4. In a small bowl, soak the saffron strands in warm milk for 5-10 minutes to release their color and aroma.

Step 5

5. Add the powdered sugar to the whisked curd and mix well until fully incorporated.

Step 6

6. Pour in the saffron milk along with the strands, and add the cardamom powder. Mix gently yet thoroughly, ensuring all the flavors combine well.

Step 7

7. Taste and, if desired, add 1 teaspoon of rose water for a floral touch.

Step 8

8. Chill the Shrikhand for at least 1 hour before serving to allow the flavors to meld together.

Step 9

9. Before serving, garnish with slivered almonds and chopped pistachios. Serve the Shrikhand chilled, either on its own or with pooris for a delightful combination.
