Ingredients

  • 4 tablespoons unsalted butter
  • 6 large yellow onions
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1 cup dry white wine
  • 8 cups beef stock
  • 1 bay leaf
  • 3 fresh thyme sprigs
  • 1 loaf French baguette
  • 2 tablespoons olive oil
  • 2 cups Gruyère cheese (shredded)
  • 0.5 cups Parmesan cheese (grated)
  • 0 black pepper (to taste)

Directions

Step 1

Peel and slice the onions thinly into half-moons.

Step 2

In a heavy-bottomed pot or Dutch oven, melt the butter over medium heat.

Step 3

Add the sliced onions to the pot along with the salt and sugar. Cook, stirring frequently, for 30-40 minutes, until the onions are deeply golden and caramelized.

Step 4

Deglaze the pot by adding the white wine, scraping up any browned bits from the bottom of the pot. Simmer for 2-3 minutes until the wine reduces slightly.

Step 5

Add the beef stock, bay leaf, and thyme sprigs to the pot. Stir to combine. Bring the soup to a simmer, then reduce the heat to low and let it cook, uncovered, for 30 minutes. Remove the bay leaf and thyme sprigs before serving.

Step 6

While the soup simmers, preheat the oven to 400°F (200°C). Slice the baguette into 1-inch slices and brush lightly with olive oil on both sides. Arrange on a baking sheet and toast in the oven for 10 minutes, flipping halfway through, until golden and crisp.

Step 7

Once the bread is toasted, set the oven to broil. Ladle the soup into oven-safe bowls and top each bowl with a toasted baguette slice. Sprinkle generously with Gruyère and Parmesan cheese.

Step 8

Carefully place the bowls on a baking sheet and broil for 2-4 minutes, until the cheese is melted and bubbly with golden brown spots.

Step 9

Remove from the oven, let cool for a few minutes, and serve hot. Season with black pepper to taste.
