Ingredients

  • 8 tablespoons Unsalted butter
  • 1 cup All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 1 cup Whole milk
  • 1 teaspoon Vanilla extract
  • 4 cups Fresh or frozen fruit (peaches, berries, or cherries work great!)
  • 1 tablespoon Lemon juice
  • 0.5 cup Brown sugar
  • 0.5 teaspoons Ground cinnamon

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Place the butter in a 9x13-inch baking dish and put it in the oven to melt while the oven preheats. Keep an eye on it to ensure it doesn’t burn.

Step 3

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

Step 4

Add the milk and vanilla extract to the dry ingredients and stir until smooth. Set the batter aside.

Step 5

In a medium saucepan, combine the fruit, lemon juice, brown sugar, and cinnamon. Cook over medium heat for 5-7 minutes, stirring occasionally, until the fruit softens slightly and releases its juices.

Step 6

Carefully remove the hot baking dish with the melted butter from the oven.

Step 7

Pour the batter evenly over the melted butter in the baking dish. Do not mix; let the batter float on top of the butter.

Step 8

Spoon the warm fruit mixture evenly over the batter. Again, do not mix. The batter will rise around the fruit while baking.

Step 9

Bake in the preheated oven for 40-45 minutes, or until the cobbler is golden brown and bubbly.

Step 10

Remove from the oven and let it cool for 10-15 minutes before serving.

Step 11

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for the ultimate treat.
