Ingredients

  • 2 pounds ground beef
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves minced garlic
  • 28 ounces canned diced tomatoes (with juices)
  • 15 ounces canned tomato sauce
  • 1 cup beef broth
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon brown sugar

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the diced onion and green bell pepper to the pot and sauté for 4-5 minutes, until softened.

Step 3

Stir in the minced garlic and cook for another 30 seconds, until fragrant.

Step 4

Add the ground beef to the pot, using a wooden spoon to break it apart. Cook until fully browned and no longer pink, about 8-10 minutes. Drain any excess fat if necessary.

Step 5

Stir in the chili powder, cumin, paprika, oregano, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes to toast the spices.

Step 6

Add the canned diced tomatoes, tomato sauce, and beef broth to the pot. Stir to combine.

Step 7

Gently fold in the kidney beans and black beans. Add the brown sugar and stir again.

Step 8

Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 9

Taste and adjust seasonings as needed (add more salt, pepper, or cayenne for heat).

Step 10

Serve the chili hot, topped with your favorite garnishes like shredded cheese, sour cream, diced onions, or chopped cilantro.
