Ingredients

  • 3 cups cooked shredded chicken
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1 4-ounce can diced green chiles
  • 8 pieces flour tortillas
  • 1.5 cups enchilada sauce
  • 1 tablespoon olive oil
  • 2 cloves minced garlic
  • 1 medium diced onion
  • 0.25 cup chopped fresh cilantro (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion becomes translucent, about 3-4 minutes.

Step 3

In a large mixing bowl, combine the cooked shredded chicken, 1 cup of shredded cheddar cheese, 1/2 cup of shredded Monterey Jack cheese, sour cream, diced green chiles, and the cooked onion and garlic mixture. Stir well to combine.

Step 4

Spread 1/2 cup of enchilada sauce evenly over the bottom of a 9x13-inch baking dish.

Step 5

Warm the flour tortillas slightly in the microwave or on a skillet to make them more pliable.

Step 6

Spoon about 1/3 cup of the chicken mixture onto each tortilla. Roll the tortilla tightly and place it seam-side down in the prepared baking dish.

Step 7

Once all the filled tortillas are arranged in the dish, pour the remaining enchilada sauce evenly over the top, ensuring all the tortillas are coated.

Step 8

Sprinkle the remaining cheddar and Monterey Jack cheeses over the top of the enchiladas.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 10

Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 11

Garnish with chopped fresh cilantro if desired, and serve hot with a side of rice, beans, or a fresh salad.
