Ingredients

  • 1 cup Unsalted butter
  • 8 oz Cream cheese
  • 2.25 cups All-purpose flour
  • 0.5 cup Fruit preserves (apricot, raspberry, or your favorite)
  • 0.25 cup Powdered sugar (for topping)

Directions

Step 1

In a large mixing bowl, use a hand mixer or stand mixer to cream together the unsalted butter and cream cheese until smooth and fluffy, about 2-3 minutes.

Step 2

Gradually add the all-purpose flour, mixing until a soft dough forms. Do not overmix.

Step 3

Divide the dough into two equal portions. Flatten each portion into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.

Step 4

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 5

On a lightly floured surface, roll out one dough disk to about 1/8-inch thickness. Keep the other disk in the refrigerator until ready to use.

Step 6

Using a 2-inch round or square cookie cutter, cut out shapes from the dough. Place the cut-outs on the prepared baking sheets, spacing them about 1 inch apart.

Step 7

With your thumb or the back of a teaspoon, gently make a small indent in the center of each cut-out. Fill each indent with about 1/4 teaspoon of fruit preserves. Be careful not to overfill, as the filling will spread during baking.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

Step 9

Remove from the oven and let the kolacky cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Once cooled, dust the kolacky generously with powdered sugar before serving.
