Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Unsalted butter (cold)
  • 0.5 teaspoons Salt
  • 6 tablespoons Ice water
  • 6 Granny Smith apples
  • 0.75 cups Granulated sugar
  • 0.25 cups Brown sugar
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 2 tablespoons All-purpose flour (for filling)
  • 2 tablespoons Unsalted butter (small pieces for filling)
  • 1 tablespoon Milk (for brushing)
  • 1 tablespoon Granulated sugar (for crust topping)
  • 1 Large paper bag (grocery-sized)

Directions

Step 1

In a large bowl, combine the flour and salt for the pie crust. Cut the cold butter into small cubes and, using a pastry cutter or your fingers, incorporate it into the flour until the mixture resembles coarse crumbs.

Step 2

Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough just comes together. Divide it into two equal portions, wrap each in plastic wrap, and refrigerate for at least 30 minutes.

Step 3

Preheat your oven to 375°F (190°C).

Step 4

Peel, core, and slice the Granny Smith apples into thin wedges. Place them in a large bowl and toss with granulated sugar, brown sugar, cinnamon, nutmeg, and the 2 tablespoons of flour to coat evenly.

Step 5

Take one portion of the chilled dough and roll it out on a floured surface into a 12-inch circle. Fit it into a 9-inch pie dish, allowing the edges to drape over the sides.

Step 6

Pour the apple filling into the pie crust. Dot the top of the filling with the 2 tablespoons of small butter pieces.

Step 7

Roll out the second portion of dough into another 12-inch circle. Place it over the apple filling. Trim the overhanging dough to about 1 inch from the edge and seal the edges together by pinching and crimping them decoratively.

Step 8

Cut a few small slits in the top crust to allow steam to escape. Brush the top with milk and sprinkle the 1 tablespoon of sugar evenly across the crust.

Step 9

Place the pie into a large grocery-sized paper bag. Fold the bag’s opening closed and staple or paperclip it shut to trap steam inside.

Step 10

Carefully place the bagged pie on a baking sheet to catch any potential drips. Bake for 60 minutes.

Step 11

After baking, carefully remove the pie from the bag (be cautious, as steam will escape). Allow it to cool for at least 30 minutes before serving to let the filling set.

Step 12

Slice and enjoy your perfectly tender, uniquely baked apple pie!
