Ingredients

  • 2 pounds ground beef (80/20 blend)
  • 1.5 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 6 slices cheddar cheese slices
  • 6 brioche burger buns
  • 6 leaves lettuce leaves
  • 2 tomato, sliced
  • 1 red onion, thinly sliced
  • 6 tablespoons mayonnaise
  • 6 tablespoons ketchup
  • 2 tablespoons butter, softened

Directions

Step 1

Preheat your grill to medium-high heat (about 375°F to 400°F).

Step 2

In a large mixing bowl, combine the ground beef, kosher salt, black pepper, garlic powder, and onion powder. Mix gently with your hands until just combined—avoid overmixing to keep the burgers tender.

Step 3

Divide the beef mixture into 6 equal portions (approximately 1/3 pound each) and form into patties about ¾-inch thick. Use your thumb to press a slight dimple into the center of each patty to prevent it from puffing up during cooking.

Step 4

Brush the brioche buns lightly with softened butter and set aside.

Step 5

Place the burger patties on the preheated grill. Cook for about 3-4 minutes per side, or until they reach your desired doneness (145°F for medium, 160°F for well-done).

Step 6

In the final minute of cooking, place a slice of cheddar cheese on each patty to melt. Remove the patties from the grill and let them rest for 5 minutes.

Step 7

While the burgers are resting, toast the buttered buns on the grill for about 1-2 minutes, until golden brown.

Step 8

To assemble the burgers, spread 1 tablespoon of mayonnaise on the bottom half of each bun. Top with a lettuce leaf, followed by a grilled burger patty with melted cheese.

Step 9

Layer on a slice of tomato and a few slices of red onion. Spread 1 tablespoon of ketchup on the top bun and place it over the assembled burger.

Step 10

Serve immediately with your favorite sides and enjoy!
