Ingredients

  • 1 kg chicken (bone-in or boneless, cut into chunks)
  • 3 large onions (finely chopped)
  • 4 medium tomatoes (pureed)
  • 5 garlic cloves (minced)
  • 1 tbsp ginger (grated)
  • 3 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 0.5 cup plain yogurt
  • 1 cup water
  • 0.25 cup fresh cilantro (chopped, for garnish)
  • 1 tsp salt
  • 2 green chilies (sliced, optional)

Directions

Step 1

Heat the vegetable oil in a large, heavy-bottomed pot over medium heat.

Step 2

Add cumin seeds and let them sizzle for 30 seconds until aromatic.

Step 3

Add the chopped onions and sauté until golden brown, about 8-10 minutes.

Step 4

Stir in garlic and ginger, and cook for another 2 minutes.

Step 5

Add the tomato puree, turmeric powder, coriander powder, and red chili powder. Mix well and cook until the oil separates from the masala, about 8-10 minutes.

Step 6

Add the chicken pieces to the pot, stirring to coat them in the spice mixture. Cook for 5 minutes, allowing the chicken to brown slightly.

Step 7

Lower the heat and stir in the plain yogurt, mixing thoroughly to prevent curdling.

Step 8

Add 1 cup of water, cover the pot, and let the curry simmer on low heat for 25 minutes, or until the chicken is tender and cooked through.

Step 9

Once the chicken is cooked, stir in the garam masala and adjust salt to taste. Add green chilies, if using.

Step 10

Garnish with fresh cilantro and serve hot with steamed rice, naan, or roti.
