Ingredients

  • 1.5 cups All-purpose flour
  • 1.5 cups Rolled oats
  • 0.5 cup Shredded coconut
  • 0.75 cup Unsalted butter, softened
  • 0.5 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized mixing bowl, whisk together the flour, rolled oats, shredded coconut, baking soda, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the butter-sugar mixture and beat until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

Step 6

Using a small cookie scoop or tablespoon, portion out dough balls onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 7

Flatten each dough ball slightly with the back of a spoon or your fingers.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look just set.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to one week.
