Ingredients

  • 2.5 lbs chicken (whole or bone-in pieces like thighs and drumsticks)
  • 10 cups water
  • 3 medium carrots
  • 3 celery stalks
  • 1 medium yellow onion
  • 3 garlic cloves
  • 0.25 cup fresh parsley
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups egg noodles (optional)

Directions

Step 1

Rinse the chicken thoroughly under cold water and set aside.

Step 2

In a large stockpot, add the chicken and pour in the water. Bring to a boil over medium-high heat.

Step 3

While the water is heating, peel and slice the carrots into rounds, chop the celery into small pieces, and dice the onion. Mince the garlic.

Step 4

Once the water with the chicken comes to a boil, reduce the heat to low. Skim off any foam or impurities from the surface using a spoon.

Step 5

Add the carrots, celery, onion, garlic, parsley, bay leaves, dried thyme, salt, and black pepper into the pot.

Step 6

Cover the pot with a lid slightly ajar and let the soup simmer on low heat for about 1 hour. Occasionally stir and ensure the chicken stays submerged.

Step 7

After 1 hour, remove the chicken pieces from the pot and set them on a plate to cool. Let the soup continue to simmer while you shred the chicken.

Step 8

Once the chicken is cool enough to handle, remove the meat from the bones and shred into bite-sized pieces. Discard the bones and any skin if desired.

Step 9

Return the shredded chicken to the pot. If using egg noodles, add them to the soup and cook for an additional 8-10 minutes, or until tender.

Step 10

Taste the soup and adjust seasonings with more salt or pepper if needed.

Step 11

Serve the soup hot, garnished with additional parsley if desired. Enjoy your hearty bowl of Dad's Chicken Soup!
