Ingredients

  • 2 pounds ground beef (80/20)
  • 1 pound ground pork
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 0.5 cup whole milk
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 0.25 cup ketchup
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cheddar cheese, cut into small blocks
  • 12 slices bacon
  • 2 tablespoons brown sugar
  • 0.25 cup additional ketchup (for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, chopped onion, minced garlic, breadcrumbs, milk, eggs, Worcestershire sauce, ketchup, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Step 3

Flatten the meat mixture onto a piece of wax paper or plastic wrap, forming a large rectangle approximately 1 inch thick.

Step 4

Place the cheddar cheese blocks in a line lengthwise in the center of the meat rectangle.

Step 5

Using the wax paper or plastic wrap, carefully roll the meat mixture over the cheese to form a log shape, making sure the cheese is well-sealed inside the meatloaf.

Step 6

Lay the bacon slices out side by side on the baking sheet, slightly overlapping each strip to create a lattice. Place the meatloaf log on top of the bacon, seam side down.

Step 7

Wrap the bacon around the meatloaf, tucking the ends underneath. Make sure the entire meatloaf is covered in bacon.

Step 8

In a small bowl, mix the brown sugar and additional ketchup to make a glaze. Brush the glaze generously over the bacon-wrapped meatloaf.

Step 9

Bake the meatloaf in the preheated oven for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).

Step 10

Optional: For extra crispiness, place the meatloaf under the broiler for 2-3 minutes at the end of the cooking time.

Step 11

Let the meatloaf rest for 10 minutes before slicing and serving. Enjoy!
