Ingredients

  • 4 cups broccoli florets
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 2 large eggs
  • 3 tablespoons butter, melted
  • 1 cup Ritz crackers, crushed
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch casserole dish and set aside.

Step 2

Blanch the broccoli florets: Bring a large pot of salted water to a boil. Add the broccoli and cook for 2 minutes, then immediately transfer the florets to a bowl of ice water to stop the cooking. Drain well and set aside.

Step 3

In a medium skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté until softened, about 3-4 minutes. Remove from heat.

Step 4

In a large mixing bowl, combine the cream of mushroom soup, sour cream, shredded cheddar cheese (reserving 1/2 cup for topping), eggs, sautéed onion, garlic powder, salt, and black pepper. Mix until thoroughly combined.

Step 5

Gently fold the blanched broccoli into the cheese mixture, ensuring all the florets are evenly coated.

Step 6

Transfer the broccoli mixture to the prepared casserole dish, spreading it out evenly.

Step 7

In a small bowl, combine the crushed Ritz crackers with melted butter. Stir until the crackers are evenly coated.

Step 8

Sprinkle the buttery cracker mixture over the casserole, followed by the reserved shredded cheddar cheese.

Step 9

Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 20 minutes, or until the topping is golden brown and bubbly.

Step 10

Remove the casserole from the oven and allow it to cool for 5 minutes before serving. Enjoy!
