  • 4 medium carrots, peeled and sliced into thick rounds
  • 2 stalks celery stalks, chopped
  • 2 leaves bay leaves
  • 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper. Toss them in the flour, shaking off any excess.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Working in batches, sear the beef cubes until browned on all sides. Remove the beef and set aside.

Step 3

Add the diced onion to the same pot and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute.
