Ingredients

  • 1 pound large shrimp (peeled and deveined)
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 2 small shallots (finely chopped)
  • 1 quarter cup brandy
  • 2 tablespoons lemon juice (freshly squeezed)
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley (chopped)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 loaf crusty bread (for serving, optional)

Directions

Step 1

Rinse the shrimp under cold water, pat them dry with paper towels, and set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the butter and let it melt completely.

Step 3

Add the minced garlic and chopped shallots to the skillet. Cook for 2-3 minutes until fragrant and softened, stirring occasionally to avoid burning.

Step 4

Raise the heat to medium-high and add the shrimp to the skillet. Cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp and set them aside on a plate.

Step 5

Carefully pour the brandy into the skillet. Let it simmer for 1 minute, scraping the bottom of the skillet with a wooden spoon to deglaze and incorporate all the flavorful bits.

Step 6

Stir in the lemon juice and heavy cream. Reduce the heat to medium-low and let the sauce simmer gently for 3-4 minutes until slightly thickened.

Step 7

Return the cooked shrimp to the skillet and toss them in the sauce until fully coated. Simmer for 2 additional minutes to heat through.

Step 8

Season the dish with salt and black pepper to taste. Sprinkle the chopped parsley over the shrimp before serving.

Step 9

Serve immediately with crusty bread for soaking up the delicious sauce, if desired.
