Ingredients

  • 2 pounds ground beef (80/20 blend)
  • 1 pound ground pork
  • 1 cup breadcrumbs
  • 1 cup milk
  • 2 large eggs
  • 1 medium, finely diced onion
  • 2 cloves, minced garlic
  • 2 tablespoons Worcestershire sauce
  • 1 cup (divided) ketchup
  • 2 cups shredded cheddar cheese
  • 12 slices bacon
  • 1 tablespoon Italian seasoning
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil and lightly grease it.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let sit for 5 minutes to soak.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, eggs, diced onion, minced garlic, Worcestershire sauce, half of the ketchup, Italian seasoning, salt, and black pepper. Mix gently but thoroughly with your hands until well combined.

Step 4

On a piece of parchment paper, flatten the meat mixture into a large rectangle, roughly 10x12 inches in size.

Step 5

Spread the shredded cheddar cheese evenly in the center of the rectangle, leaving a border of about 1.5 inches around the edges.

Step 6

Carefully roll the meat mixture into a log, using the parchment paper to help shape it. Pinch and seal the edges to ensure the cheese stays inside during cooking.

Step 7

Transfer the meatloaf onto the prepared baking sheet, seam-side down.

Step 8

Lay the bacon slices over the meatloaf, overlapping slightly, and tucking the ends underneath the meatloaf.

Step 9

Brush the remaining ketchup evenly over the top of the bacon-covered meatloaf.

Step 10

Bake in the preheated oven for 60 minutes, or until the internal temperature reaches 160°F (71°C) and the bacon is crispy.

Step 11

Let the meatloaf rest for 10 minutes before slicing. Serve hot and enjoy!
