Ingredients

  • 6 pieces Large eggs
  • 4 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon White vinegar
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 0.5 teaspoons Paprika (for garnish)
  • 2 tablespoons Cooked and crumbled bacon
  • 1 tablespoon Chopped chives
  • 1 tablespoon Pickled jalapeños (finely chopped)
  • 1 tablespoon Crumbled feta cheese
  • 1 teaspoon Capers (rinsed and drained)
  • 1 teaspoon Sriracha

Directions

Step 1

Place the six eggs in a medium saucepan and cover with water by 1 inch.

Step 2

Bring the water to a rolling boil over medium-high heat, then lower the heat and simmer gently for 10 minutes.

Step 3

Once cooked, transfer the eggs to an ice bath and let them cool completely, about 5-10 minutes.

Step 4

Gently peel the cooled eggs and slice each in half lengthwise.

Step 5

Remove the yolks and place them in a medium bowl. Set the egg whites aside on a platter.

Step 6

Using a fork, mash the yolks until smooth. Add the mayonnaise, Dijon mustard, white vinegar, salt, and black pepper to the bowl, and mix until creamy and well-combined.

Step 7

Spoon or pipe the yolk mixture back into the egg white halves, filling each cavity evenly.

Step 8

For the D Six topping idea, add a different topping combination to groups of the eggs: 1) Sprinkle with paprika. 2) Top with crumbled bacon. 3) Garnish with chopped chives. 4) Add a dollop of finely chopped pickled jalapeños. 5) Crumble feta cheese over the tops. 6) Add a couple of capers and a dot of sriracha for a spicy kick.

Step 9

Serve chilled and enjoy!
