Ingredients

  • 2 pounds beef shank
  • 1 large onion
  • 3 medium carrots
  • 2 celery stalks
  • 4 medium potatoes
  • 4 garlic cloves
  • 3 tablespoons tomato paste
  • 8 cups beef broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • 2 tablespoons parsley
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups water

Directions

Step 1

Prepare the beef shank by trimming excess fat. Season the beef shank with 1 teaspoon of salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large soup pot or Dutch oven over medium-high heat. Sear the beef shank until browned on all sides, about 4 minutes per side. Remove and set aside.

Step 3

Dice the onion, carrots, celery, and potatoes into bite-sized pieces. Mince the garlic cloves.

Step 4

In the same pot, add the diced onions and garlic. Sauté for 2–3 minutes until fragrant.

Mix in the tomato paste and cook for 1 minute to enhance its flavor.
