Preheat your oven to 400°F (200°C).
Cut the tops off the two garlic bulbs to expose the cloves slightly. Drizzle 1 tablespoon of olive oil over the garlic bulbs, wrap them in foil, and place in the oven. Roast for 30 minutes, or until the cloves are golden and soft.
While the garlic is roasting, pat the chicken thighs dry with a paper towel and season both sides with 1 teaspoon of salt and 0.5 teaspoon of black pepper.
In a small bowl, mix together ground cumin, ground coriander, ground cinnamon, ground turmeric, and smoked paprika.
Heat 2 tablespoons of olive oil in a large, oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 3–4 minutes or until golden brown. Flip and sear on the other side for 2–3 minutes. Remove the chicken from the skillet and set aside.
Once the garlic is roasted, squeeze the soft cloves into a small bowl and mash into a paste. Add the paste to the skillet along with the spice mixture. Stir for 1 minute to release the aromas.
Deglaze the skillet with the juice of 1 lemon and 0.5 cup of chicken broth, scraping up any brown bits from the bottom of the skillet.
Return the chicken thighs to the skillet, skin-side up. Drizzle the honey over the top of the chicken. Place the skillet in the oven and roast for 25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
Remove the skillet from the oven and let the chicken rest for 5 minutes. Sprinkle with freshly chopped parsley before serving.
Serve the chicken thighs with your favorite sides such as rice, couscous, or roasted vegetables. Enjoy!
