Ingredients

  • 4 cups (shredded) Green cabbage
  • 2 cups (shredded) Red cabbage
  • 1 cup (julienned or shredded) Carrots
  • 1 medium (thinly sliced) Red bell pepper
  • 4 stalks (sliced thinly) Green onions
  • 0.5 cup (chopped) Fresh cilantro
  • 2 tablespoons Toasted sesame seeds
  • 3 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 tablespoon Honey
  • 1 tablespoon Fresh lime juice
  • 1 teaspoon Grated ginger
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Red chili flakes (optional)

Directions

Step 1

In a large mixing bowl, combine the shredded green cabbage, shredded red cabbage, julienned carrots, sliced red bell pepper, sliced green onions, and chopped cilantro. Toss everything together to mix evenly.

Step 2

In a small bowl or jar, prepare the dressing by whisking together the soy sauce, rice vinegar, sesame oil, honey, lime juice, grated ginger, minced garlic, and red chili flakes (if using). Taste and adjust seasoning as needed.

Step 3

Pour the dressing over the mixed vegetables in the large bowl. Use tongs or a large spoon to toss the coleslaw until the vegetables are evenly coated with the dressing.

Step 4

Sprinkle the toasted sesame seeds over the coleslaw and give it one final toss to distribute the seeds.

Step 5

Transfer the coleslaw to a serving platter or individual bowls. Serve immediately for maximum crunch, or refrigerate for up to 4 hours to let the flavors meld together.

Step 6

Garnish with extra cilantro or sesame seeds before serving, if desired.
