In a mixing bowl, combine the all-purpose flour and salt.
Add the unsalted butter and cream cheese to the bowl. Using a pastry cutter or your hands, mix the ingredients until a soft dough forms.
Shape the dough into a ball, wrap it tightly in plastic wrap, and refrigerate for at least 1 hour or overnight.
While the dough chills, make the filling by combining cottage cheese, powdered sugar, vanilla extract, and the egg yolk in a bowl. Mix until smooth and set aside.
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
