Ingredients

  • 50 g Panko breadcrumbs

  • 1 tbsp Olive oil
  • 500 ml Marinara sauce
  • 4 pieces Zucchini (medium-sized)
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the lean ground turkey, panko breadcrumbs, egg, garlic powder, onion powder, Italian seasoning, salt, and black pepper.

Step 2

Mix the ingredients with your hands or a spatula until just combined. Do not overmix, as this can make the meatballs tough.

Step 3

Using damp hands, form the mixture into small, evenly-sized meatballs (about 1.5 inches in diameter). You should get approximately 16-18 meatballs.

Step 4

Heat olive oil in a large skillet over medium heat. Add the meatballs in a single layer and cook for 8-10 minutes, turning them occasionally until they are browned on all sides and cooked through. Remove the meatballs from the skillet and set aside.
