Ingredients

  • 250 g Yellow split peas
  • 2 tbsp Olive oil
  • 1 medium Onion
  • 1 medium Carrot
  • 2 Garlic cloves
  • 1.5 L Water or vegetable stock
  • 1 Bay leaf
  • 2 tbsp Lemon juice
  • 1 tsp Ground cumin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Rinse the yellow split peas thoroughly under cold water until the water runs clear. Set aside.

Step 2

Peel and finely chop the onion, carrot, and garlic cloves.

Step 3

In a large pot, heat the olive oil over medium heat. Add the chopped onion and carrot, and sauté for 5 minutes until softened.

Add the garlic and ground cumin to the pot, and cook for an additional 1 minute until fragrant.

Step 5

Add the rinsed split peas, water or vegetable stock, and the bay leaf to the pot. Stir well.

Step 6

Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 40–45 minutes, stirring occasionally to prevent sticking. Cook until the split peas are soft and begin to break apart.

Step 7

Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, let the soup cool slightly and blend it in batches using a countertop blender, then return it to the pot.

Stir in the lemon juice, salt, and black pepper. Adjust the seasoning to taste.
