Ingredients

  • 1 medium onion
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 0.5 teaspoons ground cinnamon
  • 0.5 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1000 milliliters vegetable broth
  • 1 teaspoon orange zest
  • 1 medium orange orange juice
  • 2 tablespoons fresh mint leaves
  • 100 grams yogurt (optional for serving)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Peel and deseed the pumpkin, then cut it into medium-sized chunks.

Finely chop the onion and garlic.

Step 3

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened and translucent, about 5 minutes.

Stir in the ground cinnamon, cumin, and coriander. Cook for an additional 1 minute to release the aromas of the spices.
