Ingredients

  • 6 large eggs
  • 0.5 cup milk
  • 1 cup cheddar cheese, shredded
  • 1 cup spinach, chopped
  • 0.5 cup red bell pepper, diced
  • 0.25 cup onion, finely chopped
  • 0.5 cup cooked bacon or ham, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil or non-stick spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Grease a 12-cup muffin tin with olive oil or non-stick spray to prevent sticking.

Step 3

In a large mixing bowl, whisk together the eggs and milk until well combined.

Step 4

Stir in the shredded cheddar cheese, spinach, red bell pepper, onion, and cooked bacon or ham.

Step 5

Add the salt and black pepper, and mix well to evenly incorporate all the ingredients.

Step 6

Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

Place the muffin tin in the preheated oven and bake for 22-25 minutes, or until the quiche muffins are set and slightly golden on top.

Step 8

Remove the muffin tin from the oven and let the quiche muffins cool for 5 minutes before carefully removing them from the tin.

Step 9

Serve warm, or store in an airtight container in the refrigerator for up to 3 days. Reheat as needed before serving.
