Preheat your oven to 375°F (190°C).
Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until al dente. Drain and lay the noodles flat on a baking sheet to cool slightly.
In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces with a spatula. Drain any excess grease and set the sausage aside.
In the same skillet, add minced garlic and red pepper flakes. Sauté for 1 minute, then add 2 1/2 cups of marinara sauce. Simmer for 5 minutes and set aside.
In a mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan, egg, fresh parsley, salt, and black pepper. Mix until well combined.
Spread 1/2 cup of the marinara sauce on the bottom of a 9x13 inch baking dish.
To assemble the roll-ups, lay each lasagna noodle flat. Spread about 2 tablespoons of the ricotta mixture evenly over the noodle. Top with a few spoonfuls of cooked sausage.
Roll the noodle up tightly and place it seam-side down in the prepared baking dish. Repeat with remaining noodles, ricotta mixture, and sausage.
Pour the remaining marinara sauce over the roll-ups, ensuring they are fully covered. Sprinkle the remaining 1 cup of shredded mozzarella over the top.
Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Let the lasagna roll-ups rest for 5 minutes before serving. Garnish with additional parsley if desired. Serve warm and enjoy!
