Ingredients

  • 226 grams unsalted butter
  • 200 grams granulated sugar
  • 2 pieces large eggs
  • 2 teaspoons pure vanilla extract
  • 375 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Directions

Step 1

In a large mixing bowl, cream together the unsalted butter and granulated sugar using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 2

Add the eggs, one at a time, beating well after each addition. Mix in the pure vanilla extract until combined.

Step 3

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 4

Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing to prevent tough cookies.

Step 5

Divide the dough into two equal portions and flatten each into a disk. Wrap each disk in plastic wrap and refrigerate for at least 1 hour or until firm.

Step 6

Preheat the oven to 175°C (350°F) and line two baking sheets with parchment paper or silicone mats.

Step 7

On a lightly floured surface, roll out one disk of dough to about 1/4-inch thickness. Use cookie cutters to cut out shapes, and transfer them to the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Reroll the scraps and repeat with the remaining dough. If the dough becomes too soft, return it to the refrigerator to firm up.

Step 9

Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are set and just beginning to turn golden.

Step 10

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Decorate the cookies as desired with icing, sprinkles, or other toppings. Store in an airtight container at room temperature for up to one week.
