  • 2 tablespoons water (optional, for flour slurry)

Directions

Step 1

Season the beef chuck roast generously with salt and pepper on all sides.

Heat the olive oil in a large, heavy-bottomed Dutch oven or oven-safe pot over medium-high heat.
