Ingredients

  • 2 cups Heavy cream
  • 4 Large eggs
  • 1/3 cup Granulated erythritol (or preferred low-carb sweetener)
  • 2 teaspoons Vanilla extract
  • 1/8 teaspoon Ground nutmeg (optional, for topping)

Directions

Step 1

Preheat your oven to 325°F (165°C). Place a deep baking dish in the center of the oven and fill it halfway with hot water to create a water bath.

Step 2

In a medium saucepan, heat the heavy cream over medium-low heat until it just begins to simmer. Do not let it boil. Remove from heat and let it cool slightly.

Step 3

In a mixing bowl, whisk together the eggs, erythritol, and vanilla extract until fully combined and slightly frothy.

Step 4

Gradually pour the warm heavy cream into the egg mixture while constantly whisking to prevent the eggs from cooking.

Step 5

Strain the custard mixture through a fine mesh sieve into another bowl to remove any egg solids, ensuring a smooth custard.

Step 6

Divide the custard evenly among four ramekins or small oven-safe dishes.

Step 7

Carefully place the ramekins into the preheated water bath in the oven. The water should come halfway up the sides of the ramekins.

Step 8

Bake for 30-35 minutes, or until the custards are set around the edges but still have a slight jiggle in the center.

Step 9

Remove the ramekins from the water bath and allow them to cool to room temperature. Optionally, sprinkle ground nutmeg on top for added flavor.

Step 10

Refrigerate the custards for at least 2 hours before serving for the best texture. Serve chilled and enjoy your creamy, low-carb custard!
